Ice Cream Cold Room
Ice cream is one of the most sensitive frozen food products due to its high content of milk fat and sugar. To maintain its original quality, the cold chain must never be broken from production to consumption including shipping period. At the center of this chain stands the ice cream cold room, which plays a critical role in preserving product stability. The most important factor during cold storage is keeping the temperature constant at negative temperature. Storage temperature for ice cream is between -25°C and -30°C. Ice cream cold room must be equipped with strong insulation cold room panels and powerful refrigeration systems capable of maintaining stable conditions at all times.
How Ice Cream Cold Room Should Be?
Most ice cream products reach the consumer in sealed packaging, which makes the role of the ice cream cold room even more crucial. The first rule of storage is to ensure that packaged ice cream is not placed directly in front of cooling fans. Direct cold airflow can cause surface burns, frost accumulation, and undesirable texture changes on the packagings.
Inside an ice cream cold room, products are usually stored on pallets, which protect them from floor contact and make handling easier with forklifts. Proper spacing between pallets is essential to allow free air circulation, ensuring uniform cooling across the entire storage area. The stacking of boxes must also follow the guidelines printed on the packaging. Over-stacking can crush cartons, leading to damaged packaging and product losses.
The ice cream cold room should operate with the FIFO (First In, First Out) system. This means that the first products placed inside should be the first to leave, ensuring that items nearing their expiration date are shipped out before newer batches. Additionally, the cold room should not store other types of products such as chemicals, detergents, or strong-smelling items, as ice cream packaging can absorb odors even when sealed. A properly organized ice cream cold room not only preserves the quality of the product but also increases efficiency in logistics and distribution, reducing potential waste and maximizing profitability for the business.

For long-term sustainability, an ice cream cold room must be designed with energy efficiency, hygiene, and advanced digital contollers technologies in mind. Since cold room energy consumption is naturally high. Therefore, strong insulation cold room panels, well-sealed cold room doors, and properly insulated flooring are critical. These helps to keep the temperature stable while optimizing energy use. Hygiene is also non-negotiable.
Floor insulation in negative rooms is a necessary. The insulated floor must be non-slip and equipped with proper drainage to support regular cleaning. Regular disinfection and strict hygiene protocols for staff further ensure product safety. Backup power systems, such as generators and UPS units, are also essential. A sudden power cut can rapidly compromise the stored products, which is why every ice cream cold room should have a reliable emergency system in place.

5m2 ICE CREAM COLD ROOM
A cold storage facility is a profitable investment. Especially if you’re skilled in the field. If you have a small space and want to design a small m² cold room facility to start, here’s a great idea. The technical drawings and 3D design below can help you achieve your dream.
Or, we can design a custom cold storage solution specifically for your existing space.

5 M2 ICE CREAM COLD ROOM
2D DRAWING
This is the fish cold room facility with the technical dimensions provided. The fish cold room above contains four different rooms. Each fish cold room has a capacity of 260 metric tons. The average daily electricity consumption is 202,4 kW. Each of these rooms is designed as 98 m² and 588 m³. The design includes a 4.5 m wide corridor for easy movement of loading and unloading equipment such as forklifts and pallet jacks. The facility also includes an office, kitchen, and WC for staff. Of course, there could even be a truck docking area and parking lot at the front. This is within our power to achieve by utilizing the available square meters.

3D RENDER
These images also show a 3D rendering of the existing plan. The cold rooms featured in the images are constructed with polyurethane-filled cold room panels and cold storage doors. Panel thicknesses can be customized from 5cm to 20cm, depending on the project. For fish rooms, 12-15cm panels are sufficient. Furthermore, the condenser units and evaporators were specifically selected for fish cold storage. Humidifiers and damper air climate/ventilation systems have created a long-lasting fish cold room capable of storing fishes with covering market value and fresh fishes.

ICE CREAM PROCESSING PLANT
Ice cream production begins with high-quality ingredients such as milk, cream, sugar, stabilizers, and flavors. These are carefully mixed and homogenized to achieve a smooth base. The mixture is then pasteurized at around 80–85 °C to eliminate harmful bacteria and quickly cooled to preserve freshness. Afterward, it is stored in maturation tanks at 2–4 °C for several hours, allowing ingredients to stabilize and develop texture. The matured mix enters a continuous freezer, where it is frozen while air is incorporated, giving ice cream its light, creamy structure. At this stage, fruits, chocolate, or sauces can be added. The semi-frozen product is filled into cups, cones, or containers and rapidly frozen. Finally, it is stored in ice cream cold rooms at -25 to -28 °C until shipment.
All contents above are presented for example purposes only.
150m2 ICE CREAM COLD ROOM
There’s always a bigger option. If you need more tonnage in a cold storage facility, here’s a plan for a larger 150m² cold room.
Ice creams can be stored in these rooms for extended periods, maintaining excellent market value.
We can even design a dedicated office, restroom, kitchen, accounting area, loading area, and parking spaces.
