How Potato Cold Room Should Be?

The system inside a potato cold room works as follows: After harvest, potatoes should undergo a “curing process” for about 10–15 days at 14–18°C with high humidity (90–95%). This process allows wounds to heal, balances respiration, and reduces the risk of microbial infection. This method is generally known as hangar-type storage, which is used for short-term storage during the harvest season. It provides an economical and practical solution for storing large quantities of potatoes near production areas, allowing effective ventilation and drying of the crop before long-term storage.
For table potatoes, the recommended temperature is 4–6°C with a humidity level of 90–95%. Under these conditions, potatoes can remain fresh, firm, and sprout-free for up to 8–10 months. This approach is known as cold room storage, which uses modern insulation systems and controlled air circulation to ensure long-term preservation. The use of fan-assisted ventilation and humidity control systems helps maintain the natural structure of the potatoes while minimizing moisture loss.

Maintaining the moisture content of potatoes in a cold storage room is extremely important. During long-term storage, preventing potatoes from shriveling, softening, or sprouting — while preserving their market value, taste, and texture — depends largely on maintaining the proper humidity balance. One of the key elements of a potato cold storage system is harvesting the potatoes at the right time and at the proper maturity level. Potato producers classify the crop based on several parameters such as size, skin quality, shape, damage condition, and weight. In recent years, some production chains have started using barcode or batch tracking systems, making it easier to access information about the product’s origin, harvest date, and supplier. Therefore, only firm and healthy potatoes should be selected for long-term storage.
Proper storage conditions — whether in ventilated crates or bulk piles — are also essential. When needed, special crates or ventilation channels that allow for air circulation help ensure uniform cooling throughout the storage area. For table potatoes, the ideal storage temperature is between 4°C and 6°C. If the temperature drops too low, potatoes may freeze, lose their flavor, and convert starch into sugar, leading to a sweet taste and dark coloration during frying. If the temperature is too high, sprouting and decay risks increase. Remember, no one wants to see soft or sprouted potatoes. Therefore, regularly monitoring, recording, and reporting the temperature and humidity levels in potato cold rooms is crucial for maintaining product quality and extending storage life.

The average daily electricity consumption is 202,4 kW. Each of these rooms is designed as 98 m² and 588 m³. The design includes a 4.5 m wide corridor for easy movement of loading and unloading equipment such as forklifts and pallet jacks. The facility also includes an office, kitchen, and WC for staff. POTATO COLD STORAGE PROCESSING PLANT
Potato processing facilities are large and complex structures. In these facilities, potatoes are collected in crates or containers after being harvested from the field and are first kept in pre-storage areas. They are then transported to the washing units using conveyor systems. Here, the potatoes are thoroughly washed using rotating brush drums and water spraying systems. This process removes soil, stones, and other foreign materials from the surface of the potatoes, ensuring that the product is clean and hygienic. It also helps remove thin layers of skin residue and gives the potatoes a smoother appearance.
After the washing process, the potatoes are passed through drying tunnels. This step prevents surface moisture, reducing the risk of mold or rot during storage. In some facilities, natural protective coatings may be applied to extend the storage life of the potatoes. This helps retain moisture and prolongs the shelf life of the product.
Finally, the potatoes are transferred to automatic grading systems. In these systems, they are sorted according to weight, size, shape, and skin quality. Infrared sensors and cameras may also be used for internal quality control. Once grading is complete, the potatoes are moved to cold storage rooms for short-term preservation and later shipped to retailers or other processing plants. This process is crucial for maintaining both product quality and market value.
